Just like any other place in Valencia, rice is a staple food and the most popular cuisine. Paella is a specialty and a common dish in Castellon. Paella actually got its name from the Latin word paella , which is a Valencian term for frying pan . The three primary ingredients of Paella are rice, olive oil and saffron. Paella is usually topped with vegetables, seafood and some meat and the dish is usually prepared during Sundays and on Fellas.
Paella is so simple to cook. The meat and seafood are fried in a large shallow frying pan. The olive and rice is then added in. Then a boiling stock is poured in the pan. As soon as the rice is cooked, it should be removed from the heat and served as soon as the paella is cooled and completely cooked. To add a little zest to the usual cuisine, lemon juice is usually added to it. Traditionally, Paella is eaten right off the pan with a spoon, and no bread should be eaten with it. It has been Spanish custom to dish up big servings during town festivals, important gatherings and family occasions. There s one trivia connected to cooking paellas: male adults of the family usually prepare them instead of women.

Castellon is blessed with lots of sea, and that s the reason why seafood is abundant in the city. Fresh prawns are available anywhere in the city but the prawns at Vinaros claim to be the best.
Another unique delicacy that Castellon has to offer is the artichauts (artichokes). These are green vegetables that are very healthy and delicious and the town of Benicarló is said to have the most mouth-watering artichokes.
